Coconut is everywhere these days: beauty products, baked goods, and smoothies just to name a few. With it comes a host of health benefits including antiviral, antibacterial, and antifungal properties. Coconut is also nature's best source of medium-chain fatty acids (MCFAs) a.k.a. medium-chain triglycerides (MCTs). But enough science speak. All you must know is that A.) coconut fat is easily digested (score!) and B.) coconut is quickly burned by the liver for energy (double score!)
Below is a who's who of what to know regarding all things coconut.
Coconut Flour: Fiber rich and gluten free, it's a great flour for those with celiac disease or on paleo/carbohydrate conscious diets. It adds a delicate sweetness to breads, muffins, and cookies complemented by a soft, moist crumb. It can be a little tricky to bake with so it is best to follow a recipe designed with coconut flour in mind (at least the first time around.)
Below is a who's who of what to know regarding all things coconut.
Coconut Nectar & Coconut Palm Sugar: The best news about coconut sap based sweeteners is that they don't cause blood sugar spikes the way other sweeteners do. They can be used cup for cup in any recipe calling for sugar, just be sure to stick to the nectar when a liquid sweetener is called for and the palm sugar when a granulated sweetener is needed. The flavor profile of both isn't at all coconut: I would describe it as a touch less sweet with a toasty caramel/molasses like taste.

Start Your Day With Green Lemonade!
A great start to your day! Proper hair care starts in the kitchen. This green juice nourishes your cells from the inside out, tastes great, and gives you a natural buzz unlike a morning java fix. I love to drink this before my kundalini or bikram yoga practice along with a spoonful of coconut cream. This beverage will make you glow! -Miranda Hunt
Green Lemonade (Serves 2)
2 cups of filtered water
2 organic granny smith apples, cut into 6 pieces each
1/8 teaspoon cayenne
A thumb sized piece of ginger
1 tumeric rhizome (Found in Indian & Asian markets and some Whole Foods. If not available, substitute 1 teaspoon ground tumeric. Make sure it's fresh as ground spices quickly lose their vitality.)
2 cups of kale, packed
1 8" piece of burdock root, scrubbed (Burdock is a great blood purifier.)
Place the above ingredients in a high speed blender and buzz until everything is homogeneous and smooth. Pass juice through a strainer squeezing out as much liquid from the pulp as possible. Serve in glasses with ice if desired and a glass or metal straw to keep it natural. Enjoy!

Vidal Sassoon, Inspirational Hair Dresser
Vidal Sassoon passed away at age 84 of Leukemia on May 8th, 2012. This inspirational hairstylist changed the world of hair styling forever. He created a sleek geometric cut that spread from London to Hollywood in the 1960's. In 1970 he opened his own salon in Beverly Hills. Sassoon was instantly a celebrity hair stylist. He made the hand held blow dryer a staple in every salon. The name Sassoon became synonymous with top models across the globe. We will all be mourning the death of this brilliant man that forever changed the world of hair and fashion.
